I found a recipe for chicken and dumplings in the crock pot and was a little hesitant, but I figured as long as it was better than the stuff from a can, it would be counted as a win.
I may actually start making this like once a week. It really shouldn't even count as cooking, but it does!
1 package boneless, skinless chicken breasts (3-4)
2 cans cream of chicken soup
about 1 cup water
black pepper and onion powder (next time I will also add a little garlic powder)
Put it all in the crock pot on low for about 8 hours (or high for about 4) or until the chicken is cooked. Then shred it with a fork.
Now, for the dumplings. If cooking for you requires dirtying more than a single fork you can mix up some dumplings with baking mix. Or you can be as lazy as I was and use a can of biscuits. Just tear them into little pieces and drop them in with the chicken. Make sure you poke them in and put the lid back on for about half an hour!
Yup, that's it! I'm telling you, it's amazing.
I think I am going to try this for dinner tomorrow night...what kind of biscuits did you use?
ReplyDeleteNot the huge or super-flaky kind, just regular cheap biscuits. I quartered them because I thought they were small enough, but they fluff up a lot when you cook them, so you need to cut/tear them pretty small (6-8 pieces per biscuit)

ReplyDeleteOH WOW! That is all I can say!! I have tried several different chicken and dumnpling recipes and Joey has never been really crazy about them. This one he scarfed down and asked when we are going to have it again!!!! The chicken was SO tender. I just dumped it all in (chicken still frozen) this morning and by the time I got home the kitchen smelled great! I did chicken broth instead of water and it was a little salty, I think next time (since I double it) I will do 1 can broth, 1 can water. Joey accidently got Grands homestyle biscuits, and they worked out just fine.
